Can I plug the Poly EncorePro 520V straight into my laptop?

No. It ends in a Poly Quick Disconnect plug, not USB or 3.5 mm. You need a Poly QD-to-USB adapter — the DA75 (786C6AA), DA85 (786C7AA) or the Microsoft Teams certified DA85-M (786C8AA).
